- 240ml dairy-free milk
- 1 tsp apple cider vinegar
- 210g self-raising flour
- 50g cocoa powder
- 100g caster sugar
- 60ml sunflower oil
- 210g dairy-free block butter
- 200g icing sugar
- 20ml aquafaba
- 100g dairy-free dark chocolate
- Oreo cookies for decoration
Instructions
- Preheat oven to 180°C (350°F). Prepare cupcake tray with liners.
- Combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
- Mix together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda in another bowl.
- Add buttermilk mix and sunflower oil to dry ingredients; stir until just combined.
- Fill cupcake liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
- For the frosting, beat dairy-free butter and icing sugar until creamy; add aquafaba gradually, then fold in ground Oreo crumbs.
- Once cooled, frost cupcakes and decorate with melted dark chocolate and Oreo cookie bats.
