  • 240ml dairy-free milk
  • 1 tsp apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter
  • 200g icing sugar
  • 20ml aquafaba
  • 100g dairy-free dark chocolate
  • Oreo cookies for decoration

Instructions

  1. Preheat oven to 180°C (350°F). Prepare cupcake tray with liners.
  2. Combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. Mix together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda in another bowl.
  4. Add buttermilk mix and sunflower oil to dry ingredients; stir until just combined.
  5. Fill cupcake liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
  6. For the frosting, beat dairy-free butter and icing sugar until creamy; add aquafaba gradually, then fold in ground Oreo crumbs.
  7. Once cooled, frost cupcakes and decorate with melted dark chocolate and Oreo cookie bats.
