  • zest and juice of 1 orange
  • 3 tbsp apple juice
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp allspice
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • extra apple juice (for serving)
  • icing sugar (for garnish)
  • ½ cup butter for sauce
  • 1 cup granulated sugar
  • ½ cup heavy cream

Instructions

  1. Combine sultanas, prunes, candied citrus peel, grated apple and carrot in a bowl. Add orange zest and juice along with apple juice. Let it sit for at least an hour.
  2. Prepare your pudding basin by lining it with parchment paper and greasing it.
  3. In another bowl, whisk flour, baking powder, baking soda, salt, and spices.
  4. Cream together softened butter and brown sugar until crumbly; beat in egg. Fold in the fruit mixture.
  5. Add the dry ingredients to the wet mixture until smooth; transfer into the prepared basin.
  6. Steam for about 3.5 to 4 hours until cooked through (check temperature reaches 200°F).
  7. For the sauce: Melt butter in a saucepan, stir in sugar until gritty; add heavy cream and bring to boil while whisking.
  8. Dust pudding with icing sugar before serving alongside warm apple juice butter sauce.
