- 16 oz dry orzo
- 2 cups cooked chicken (diced)
- 3 cups unsalted chicken stock
- 1 cup heavy cream
- 5 garlic cloves (minced)
- 2/3 cup grated Parmesan cheese
- 1.5 cups shredded mozzarella cheese
- 3 cups baby spinach leaves (roughly chopped)
- 1 pint cherry tomatoes
- Juice of 1/2 lemon
- Italian seasoning

Instructions
- Preheat your oven to 375°F (190°C).
- In a large saucepan, bring water to boil and cook the dry orzo according to package instructions until al dente (8–10 minutes). Drain and set aside.
- In a large mixing bowl, combine cooked chicken, chicken stock, heavy cream, minced garlic, Parmesan cheese, mozzarella cheese, spinach leaves, cherry tomatoes (whole or halved), lemon juice, Italian seasoning, salt, and pepper.
- Gently mix in the cooked orzo until well combined.
- Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
- Cover with aluminum foil and bake for about 30 minutes.
- Uncover and bake for an additional 10 minutes until bubbly and golden on top.
- Let cool slightly before serving.
