  • 1 cup firm tofu, crumbled
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, diced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain and press the firm tofu to remove excess moisture; crumble it into small pieces.
  3. In a large bowl, whisk together whole wheat flour, baking powder, salt, and pepper.
  4. In a skillet, heat olive oil over medium heat and sauté chopped spinach and diced bell peppers until soft.
  5. Combine the crumbled tofu and sautéed vegetables in another bowl; fold this mixture into the dry ingredients until just combined.
  6. Spoon the batter into greased muffin tins until about three-quarters full.
  7. Bake for 20-25 minutes until golden brown on top.
