  • 2 green onions (finely chopped)
  • 2 tbsp soy sauce
  • 1 cup breadcrumbs (or gluten-free)
  • 1 large egg (or flax egg)
  • Olive oil for cooking

Instructions

  1. Cook quinoa if not prepped. Squeeze excess water from the grated zucchini.
  2. In a large bowl, mix cooked quinoa, zucchini, carrot, and chickpeas.
  3. Add bell pepper, green onions, soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper; mix well.
  4. Incorporate breadcrumbs and egg or flax egg until the mixture holds together.
  5. Shape into patties about ¾ inch thick.
  6. Preheat oven to 375°F (190°C). Bake on parchment-lined baking sheet for about 20 minutes or until golden brown.
