- 1 cup breadcrumbs (or gluten-free)
- 1 large egg (or flax egg)

Instructions
- Cook quinoa if not prepped. Squeeze excess water from the grated zucchini.
- In a large bowl, mix cooked quinoa, zucchini, carrot, and chickpeas.
- Add bell pepper, green onions, soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper; mix well.
