- 18 oz all-purpose flour
- ¼ cup + 1 Tbsp granulated sugar
- 2½ tsp fine sea salt
- 1 Tbsp + 1/2 tsp instant yeast
- ½ cup + 2 Tbsp cold water
- ½ cup + 2 Tbsp cold milk
- 3 Tbsp softened unsalted butter
- 1¼ cups cold unsalted butter (European-style)
- 1 large egg
- 1 egg yolk
- Pinch of salt
Instructions
- In a bowl, mix flour, sugar, salt, and yeast. Add cold water and milk; form a rough dough.
- Knead lightly until smooth; let rest for about 30 minutes.
- Shape softened butter into a rectangle; refrigerate until firm.
- Roll out the dough into a large rectangle; encase chilled butter inside it.
- Roll out again and fold into thirds; repeat two more times.
- Cut into triangles, roll from base to tip to shape croissants.
- Allow croissants to rise until doubled in size (~1 hour).
- Preheat oven to 400°F (200°C). Brush with egg wash and bake for about 20 minutes until golden.
