  • 1 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your grill to medium-high heat. Season the chicken or steak with olive oil, chili powder, cumin, salt, and pepper. Grill for 2-3 minutes on each side until cooked through.
  2. In a mixing bowl, combine diced tomatoes, red onion, chopped cilantro, jalapeño (if using), lime juice, salt, and pepper to make pico de gallo.
  3. In a small bowl, whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and black pepper to create the chipotle aioli.
  4. To assemble the bowls, place cooked rice at the bottom of each serving bowl. Top with grilled protein and generous spoonfuls of pico de gallo. Drizzle with chipotle aioli before serving.
