  • 1 can pineapple chunks (20 oz) with juice
  • 0.5 cup brown sugar
  • 0.33 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger (or 1 tablespoon fresh)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Season chicken with salt, pepper, and garlic powder.
  3. In a skillet over medium-high heat, brown the chicken for about 4 minutes.
  4. Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Transfer the chicken to the baking dish and pour the pineapple mixture over it; stir gently to coat.
  6. Cover with foil and bake for 25–30 minutes until cooked through (165°F).
  7. Remove foil and bake another 5–10 minutes for caramelization.
  8. Let rest for 5 minutes before serving.
