Instructions

  1. In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat and chop into bite-sized pieces.
  2. In a small bowl, whisk together lime juice, remaining olive oil, lime zest, chili powder, cumin, salt, and pepper until well combined.
  3. In a large bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and cooked shrimp.
  4. Pour the dressing over the mixture and gently toss until well coated.
