- 1 egg
- 4 Tbsp melted coconut oil
- ¾ cup coconut sugar
- 2 cups almond flour
- ¼ cup tapioca flour
- ½ tsp baking soda
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 cup white chocolate chips
- 16 oz softened cream cheese (dairy-free if needed)
- ⅓ cup coconut sugar
- 1 tsp peppermint extract
- Whipped coconut cream
- Candy canes
- 1 Tbsp red and green sprinkles (plus more for decorating)
Instructions
- Preheat your oven to 350°F. In a mixing bowl, combine egg, melted coconut oil, coconut sugar, vanilla extract, and almond extract.
- Fold in almond flour, tapioca flour, baking soda, and red and green sprinkles until well combined.
- Press the mixture into a greased 9-inch springform pan to form the crust and bake for 20-24 minutes until golden brown.
- Melt white chocolate in a skillet over low heat or using a double boiler; let cool slightly.
- In another bowl, beat cream cheese with coconut sugar and peppermint extract until smooth. Add melted white chocolate and mix well.
- Pour filling into cooled crust; smooth the top with an uneven spatula.
- Refrigerate for at least 6 hours or overnight until set.
- Decorate with whipped coconut cream and candy canes before serving.
