  • 4 1/2 tablespoons melted vegan butter
  • 1/4 teaspoon ground cinnamon (for crumb topping)
  • 1 1/2 cups all-purpose plain flour (for batter, spooned and leveled)
  • 3/4 cup granulated sugar (for batter)
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt (or unsweetened applesauce)
  • 1/3 cup dairy-free milk
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the strawberry filling by tossing chopped strawberries with sugar, lemon juice, and flour in a bowl. Set aside.
  2. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  3. For the crumb topping, mix flour, sugar, melted vegan butter, and cinnamon until crumbly; set aside.
  4. In a separate bowl, combine dry ingredients for the cake batter. In another bowl, whisk together wet ingredients. Mix wet and dry ingredients until just combined.
  5. Pour half of the batter into the prepared pan, add half of the strawberries, then layer on remaining batter and strawberries. Sprinkle crumb topping on top.
  6. Bake for about 65 minutes or until a toothpick inserted in the center comes out clean.
