- 3 3/4 cups fresh strawberries, chopped

- 6 tablespoons granulated sugar (for batter)
- 4 1/2 tablespoons melted vegan butter
- 1/4 teaspoon ground cinnamon (for crumb topping)
- 1 1/2 cups all-purpose plain flour (for batter, spooned and leveled)
- 3/4 cup granulated sugar (for batter)
- 2 1/4 teaspoons baking powder
- Pinch of salt
- 1/2 cup dairy-free yogurt (or unsweetened applesauce)
- 1/3 cup dairy-free milk
- 1/3 cup neutral flavored oil
- 1 tablespoon apple cider vinegar (or lemon juice, optional)
- 1 teaspoon vanilla extract
Instructions
- Prepare the strawberry filling by tossing chopped strawberries with sugar, lemon juice, and flour in a bowl. Set aside.
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
- For the crumb topping, mix flour, sugar, melted vegan butter, and cinnamon until crumbly; set aside.
- In a separate bowl, combine dry ingredients for the cake batter. In another bowl, whisk together wet ingredients. Mix wet and dry ingredients until just combined.
- Pour half of the batter into the prepared pan, add half of the strawberries, then layer on remaining batter and strawberries. Sprinkle crumb topping on top.
