  • 240g all-purpose flour (gluten-free option available)
  • 220g dairy-free butter
  • 100g pumpkin puree
  • 50g maple syrup
  • 100g icing sugar
  • 2 tablespoons caster sugar
  • 1 teaspoon pumpkin spice
  • 1 & 1/2 teaspoons pumpkin spice
  • 2 teaspoons cornstarch / cornflour
  • Dairy-free milk
  • Ice-water

Instructions

  1. Prepare the dough by mixing flour, sugar, and pumpkin spice in a bowl. Incorporate cold dairy-free butter until crumbly, then add ice-water until combined. Chill for 30 minutes.
  2. For the filling, combine pumpkin puree, pumpkin spice, maple syrup, and cornstarch in a separate bowl.
  3. Preheat the oven to 180°C (350°F). Roll out chilled dough into 0.5cm thickness.
  4. Cut rectangles from the dough; place half on a lined baking tray. Add filling and cover with remaining rectangles, sealing edges with a fork.
  5. Bake for 20-25 minutes until golden brown and cool slightly before icing.
  6. Mix icing ingredients together and drizzle over cooled pop tarts.
