  • 1 block (14 oz) extra-firm tofu
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean towels for 15 minutes to remove excess moisture.
  2. Cut the tofu into cubes and coat with cornstarch.
  3. Heat oil in a skillet over medium-high heat and cook the tofu until golden brown on all sides.
  4. Sauté sliced peppers and onions in the same skillet until caramelized.
  5. Add minced garlic and ginger, cooking briefly.
  6. Toss in pineapple chunks and let them caramelize for a few minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup; pour over the mixture along with the crispy tofu, stirring gently.
