  • 1 pound boneless skinless chicken breasts

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 12 cups baby spinach
  • Freshly parsley, for garnish

Instructions

  1. Slice chicken breasts in half lengthwise to create thin cutlets.
  2. Season both sides of the chicken with salt and pepper.
  3. Heat olive oil and butter in a skillet over medium heat; cook chicken until golden brown (about 5-7 minutes per side) and reaches an internal temperature of 165°F. Remove from skillet.
  4. Sauté onion until translucent, then add garlic and cook for an additional minute.
  5. Stir in sun-dried tomatoes and Italian seasoning, followed by chicken broth and heavy cream; bring to a simmer.
  6. Add half of the Parmesan cheese, stirring until thickened; season to taste.
  7. Fold in spinach until wilted, then return chicken to the skillet, coating it well with the sauce.
  8. Serve hot, garnished with remaining Parmesan cheese and fresh parsley.
