  • 1/4 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Corn Syrup
  • 1 tablespoon Water
  • 2 tablespoons Butter
  • 1/2 teaspoon Pure Vanilla Extract

Instructions

  1. Prepare your baking sheet by lining it with parchment paper or a Silpat mat.
  2. In a medium-small saucepan, combine walnuts, both sugars, corn syrup, and water. Stir gently until mixed.
  3. Add butter and attach a candy thermometer to the pan. Heat the mixture while stirring occasionally.
  4. Monitor closely until it reaches 295°F (145°C). If sugar crystals form on the sides, dissolve them with a wet pastry brush.
  5. Once caramelized, remove from heat and stir in vanilla extract.
  6. Quickly spread the mixture onto the lined baking sheet using two forks to separate the nuts.
  7. Allow cooling completely before enjoying.
