- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and cook according to package instructions until tender (about 20–25 minutes).
- In a skillet over medium heat, sauté onions, carrots, and bell peppers in a splash of vegetable broth for about five minutes until softened.
- In a large bowl, mix cooked lentils with sautéed vegetables, grated zucchini, oats, broth, garlic powder, thyme, salt, and pepper until well combined.
- Preheat the oven to 375°F (190°C) and line a loaf pan with parchment paper. Spoon the mixture into the pan and shape it into a loaf.
