  • 7 tbsp unsalted butter (room temperature)
  • 2 tsp salt
  • 1/2 cup + 1 tsp cold water
  • 1 cup + 2 tbsp cold unsalted butter
  • 1 egg
  • 1 egg yolk

Instructions

  1. In a large bowl, combine flour, sugar, yeast, milk, room temperature butter, and salt. Mix on low speed.
  2. Gradually add cold water and knead until smooth. Shape into a rectangle and refrigerate overnight.
  3. Pound the cold butter between parchment paper into a rectangle and freeze for about 20 minutes.
  4. Roll out the dough and encase the frozen butter inside it; seal edges firmly.
  5. Roll out and fold the dough multiple times to create layers; chill between folds.
  6. Cut triangles from the rolled dough and shape them into croissants.
  7. Allow croissants to rise in a warm environment for about two-and-a-half hours.
  8. Bake in a preheated oven at 375°F (190°C) until golden brown.
