  • 2 ¼ tsp active dry yeast
  • 2 tbsp granulated sugar
  • 2 large eggs
  • 4 tbsp unsalted butter
  • 3 ½ cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter (for filling)
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh herbs (thyme, parsley, or rosemary)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Activate the yeast by mixing warm milk, sugar, and yeast in a bowl. Let it sit for about 10 minutes until foamy.
  2. Prepare the dough by adding eggs, softened butter, flour, and salt to the yeast mixture. Knead until smooth and elastic. Cover and let rise for about 1 hour.
  3. Make the garlic herb filling by melting butter in a pan over medium heat and cooking minced garlic for about 2 minutes. Stir in chopped herbs and allow to cool slightly.
  4. Roll out the risen dough into a large rectangle on a floured surface. Brush with garlic herb butter and sprinkle shredded mozzarella cheese evenly.
  5. Form the swirl by tightly rolling the dough into a log shape. Slice lengthwise to reveal the swirls and twist both halves together with cut sides facing up.
  6. Place in a greased baking pan and let rise again for about 30–40 minutes until puffed up.
  7. Preheat oven to 350°F (175°C). Brush the top with egg wash and bake for 35–40 minutes until golden brown.
  8. Allow cooling for about 15 minutes before slicing.
