  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1/2 medium onion, sliced (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Instructions

  1. In a mixing bowl, coat chicken pieces with cornstarch, salt, and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat; cook chicken until golden brown, about 6-8 minutes.
  3. In the same skillet, combine ketchup, vinegar, soy sauce, sugar, and pineapple juice; bring to a simmer.
  4. Add cornstarch slurry to thicken the sauce while stirring constantly.
  5. Return cooked chicken to the skillet along with pineapple chunks and veggies; mix well and heat through for another 3-5 minutes.
