  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 432g tin pineapple pieces (drained)
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon grated ginger
  • 2 cloves garlic (grated)

Instructions

  1. Season chicken with salt and pepper; coat with cornstarch.
  2. Heat vegetable oil in a wok over medium-high heat; fry chicken until golden brown.
  3. Remove chicken and sauté onion and bell peppers until tender-crisp.
  4. Combine sauce ingredients in a bowl; pour over sautéed veggies and add chicken and drained pineapple.
