  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • 2 cloves garlic
  • 432 g tin pineapple pieces

Instructions

  1. Toss diced chicken breast with cornstarch in a mixing bowl; season with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat; add the coated chicken in a single layer and cook until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté sliced onion and bell peppers for about 3-4 minutes until softened.
  4. Combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; pour into the skillet with vegetables.
  5. Return cooked chicken to the skillet and stir well; cook for an additional 5 minutes.
  6. Gently fold in pineapple pieces; heat through for another minute or two.
