- 50 ml vegetable oil
- 1 onion
- 1 red bell pepper
- 1 yellow bell pepper
- 6 tablespoons ketchup
- 2 tablespoons cider vinegar
- 6 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger
- 2 cloves garlic
- 432 g tin pineapple pieces
Instructions
- Toss diced chicken breast with cornstarch in a mixing bowl; season with salt and pepper.
- Heat vegetable oil in a skillet over medium-high heat; add the coated chicken in a single layer and cook until golden brown (5-7 minutes). Remove and set aside.
- In the same skillet, sauté sliced onion and bell peppers for about 3-4 minutes until softened.
- Combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a bowl; pour into the skillet with vegetables.
- Return cooked chicken to the skillet and stir well; cook for an additional 5 minutes.
- Gently fold in pineapple pieces; heat through for another minute or two.
