- ½ cup celery (chopped)
- ½ cup onion (chopped)
- ½ cup carrots (chopped)
- 1 tbsp fresh thyme
- 1 tbsp fresh sage
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 cups bread flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp granulated sugar
- ½ tsp salt
- 1 ¼ cups buttermilk
- 8 tbsp unsalted butter (melted then cooled – divided)
- 1 tsp fresh rosemary (chopped)
Instructions
- In a food processor, combine chopped celery, onion, carrots, thyme, sage, salt, and black pepper. Pulse until finely chopped.
- Heat olive oil in a skillet over medium heat; add the vegetable mixture and cook for 10-12 minutes until softened. Set aside to cool.
- Preheat the oven to 425°F (220°C). In a large bowl, mix bread flour, baking powder, baking soda, sugar, and salt.
- In another bowl, whisk together buttermilk and 4 tbsp melted butter; pour into dry ingredients and stir until combined. Add cooled vegetable mixture.
- Drop spoonfuls of dough onto a baking sheet and bake for 12 minutes.
- Mix remaining melted butter with chopped rosemary; brush on biscuits after initial bake and return to oven for an additional 6-8 minutes until golden brown.
