Ingredients

  • ½ cup celery (chopped)
  • ½ cup onion (chopped)
  • ½ cup carrots (chopped)
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 cups bread flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp granulated sugar
  • ½ tsp salt
  • 1 ¼ cups buttermilk
  • 8 tbsp unsalted butter (melted then cooled – divided)
  • 1 tsp fresh rosemary (chopped)

Instructions

  1. In a food processor, combine chopped celery, onion, carrots, thyme, sage, salt, and black pepper. Pulse until finely chopped.
  2. Heat olive oil in a skillet over medium heat; add the vegetable mixture and cook for 10-12 minutes until softened. Set aside to cool.
  3. Preheat the oven to 425°F (220°C). In a large bowl, mix bread flour, baking powder, baking soda, sugar, and salt.
  4. In another bowl, whisk together buttermilk and 4 tbsp melted butter; pour into dry ingredients and stir until combined. Add cooled vegetable mixture.
  5. Drop spoonfuls of dough onto a baking sheet and bake for 12 minutes.
  6. Mix remaining melted butter with chopped rosemary; brush on biscuits after initial bake and return to oven for an additional 6-8 minutes until golden brown.
