  • 4 cups fresh strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 260 g ladyfingers
  • Freeze-dried strawberries (for garnish)

Instructions

  1. Prepare the strawberry syrup by cooking mashed strawberries with water, sugar, and lemon juice until thickened. Cool completely.
  2. Whisk together mascarpone, sugar, and vanilla until smooth. In a separate bowl, whip heavy cream to stiff peaks and fold into the mascarpone mixture along with cooled syrup.
  3. Dip ladyfingers briefly in strawberry syrup and layer them in a dish. Spread half the mascarpone filling over them, add another layer of dipped ladyfingers, then top with remaining filling.
  4. Refrigerate for at least 6 hours or overnight. Before serving, dust with freeze-dried strawberry powder and garnish with fresh strawberry slices.
