Ingredients
- 2 cups fresh or frozen strawberries
- 1 ½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup light brown sugar
- ½ cup unsalted butter, cold
- ¼ cup honey or maple syrup (optional)
- 2 tablespoons granulated sugar (or honey)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon (optional)
Instructions
- Prepare the strawberry filling by simmering chopped strawberries with sugar, lemon juice, cornstarch, and vanilla until thickened. Let cool.
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
- Reserve two-thirds of the crumble mixture for topping. Press the remaining mixture into the baking pan as a base.
- Spread cooled strawberry filling over the base and sprinkle with remaining crumble. Press lightly.
- Bake for 35–40 minutes until golden brown. Cool completely before slicing into squares.
