- 4 cups lemon juice (bottled or fresh)
- 6 cups granulated sugar
Instructions
- Prepare your water bath canner and pint jars. Keep lids and bands in simmering water.
- Puree the strawberries in a food processor until liquified. Transfer to a large non-reactive saucepan.
- Add lemon juice and sugar to the puree, stirring well. Heat gently over medium heat until reaching 190-200°F.
- Fill hot pint jars with the mixture, leaving 1/4 inch headspace. Seal with lids and bands.
- Process jars in boiling water for 15 minutes, then allow them to cool undisturbed for 12-24 hours.
