  • 5 large egg yolks
  • 120 g granulated sugar (divided)
  • 60 g milk
  • 50 g oil
  • 1 teaspoon vanilla extract
  • 100 g cake flour
  • 1 teaspoon baking powder
  • 400 g heavy cream (cold)
  • 40 g powdered sugar
  • Fresh strawberries (for decoration)

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare your cake pans by greasing them lightly and lining with parchment paper.
  2. In a clean bowl, beat egg whites with cream of tartar until soft peaks form; gradually add in 100g sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks and remaining sugar; add milk, oil, and vanilla extract until smooth.
  4. Sift together cake flour and baking powder, then gently fold into the egg yolk mixture.
  5. Carefully fold in one-third of the whipped egg whites to lighten the batter, then fold in the rest until no streaks remain.
  6. Divide batter between prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  7. Let cool for about 10 minutes before transferring to wire racks.
  8. For whipped cream, beat cold heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Assemble layers by spreading whipped cream and diced strawberries between each cake layer; frost the top with remaining whipped cream and decorate.
