  • 3 ounces sugar-free strawberry Jell-O (1 package)
  • 4 egg whites
  • ⅓ cup canola oil
  • 1 cup frozen unsweetened strawberries (thawed)
  • ½ cup water
  • ⅓ cup butter (softened)
  • 2 ⅓ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the white cake mix and strawberry Jell-O until combined. Add egg whites and canola oil, beating until smooth.
  3. Mash the thawed strawberries in a small bowl, reserving 3 tablespoons for later use. Stir the remaining strawberries and ½ cup water into the batter.
  4. Pour the batter evenly into prepared pans and bake for 20-25 minutes, or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to a wire rack to cool completely.
  5. For frosting, blend softened butter with reserved strawberries and gradually add powdered sugar until light and fluffy.
