  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper
  • ½ medium yellow onion
  • 2 cans quartered artichoke hearts
  • 2 cups baby spinach
  • ½ cup mayonnaise
  • 4 garlic cloves
  • 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the chicken breasts into 1-inch pieces and place in a large mixing bowl.
  2. Add finely chopped bell pepper, onion, drained artichoke hearts, chopped spinach, and optionally grated parmesan cheese to the bowl.
  3. In a separate bowl, mix mayonnaise, minced garlic, lemon zest and juice, oregano, thyme, salt, and pepper until well combined.
  4. Pour the dressing over the chicken and veggies; gently stir until everything is well coated.
  5. Transfer the mixture to a greased 9×13-inch baking pan. Bake uncovered for about 25 to 30 minutes or until the chicken is cooked through.
