- 2 lbs boneless, skinless chicken thighs
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large onion
- 4 cloves garlic
- 1 inch ginger
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon sriracha (or more, to taste)
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 teaspoon sesame oil
- 1/4 cup chopped green onions
- Sesame seeds
- Cooked rice
Instructions
- Marinate the chicken: In a bowl, mix chicken pieces with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Cover and refrigerate for at least 30 minutes.
- Prepare the sauce: Whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a small bowl.
- Cook the chicken: Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for 5-7 minutes until browned.
- Sauté vegetables: Add more olive oil to the skillet and sauté onions and bell peppers for about 5-7 minutes until tender-crisp.
- Combine: Add cooked chicken back to the skillet with sautéed vegetables and pour over prepared sauce. Simmer until the sauce thickens slightly.
