Instructions

  1. Cream together softened butter and 1 cup of sugar in a mixing bowl until light and fluffy. Add applesauce, apple cider, molasses, egg, and vanilla; mix until well combined.
  2. In another bowl, whisk together gluten-free flour blend, baking soda, spices, and salt. Gradually add to wet ingredients in three batches until just combined.
  3. Cover the dough and refrigerate for at least two hours or overnight.
  4. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Scoop cookie dough by tablespoonfuls into the remaining sugar to coat each ball before placing on prepared sheets.
