  • 1 large head of broccoli, chopped into small florets
  • 1 large carrot, grated
  • 8 ounces smoked gouda, grated

Instructions

  1. In a large saucepan over medium heat, melt the unsalted butter. Add diced onions and sauté until translucent, about 4 minutes. Stir in minced garlic and cook for another 30 seconds.
  2. Add all-purpose flour to create a paste and cook for 1 minute.
  3. Gradually whisk in the broth and whole milk. Season with salt, paprika, and pepper.
  4. Stir in chopped broccoli and grated carrot; bring to a simmer. Cover and cook on low heat for 10-12 minutes until vegetables are tender.
  5. Remove from heat and stir in shredded smoked gouda until melted and smooth.
