- 2 medium zucchinis (cubed)
- 1 onion (cut into ¾-inch pieces)
- 1 bell pepper (any color, cut into ¾-inch pieces)
- 4 fully cooked sausages (sliced into circles ¼-inch thick)
- ¼ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp dried basil
- ¼ tsp onion powder
- ¼ tsp pepper
- ½ tsp salt
- 2 ½ tbsp olive or avocado oil
- 1 tsp garlic (minced)
- Fresh basil (for garnish – optional)
Instructions
- Heat 1 tbsp of olive oil in a skillet over medium-high heat.
- Add the chopped sausage and sauté until browned. Remove from the pan.
- Lower the heat to medium and add the remaining oil along with zucchini, onion, and bell pepper.
- Season with oregano, garlic powder, basil, onion powder, salt, and pepper. Stir well.
- Cook until vegetables are tender (about 5 minutes).
- Return the sausage to the skillet with minced garlic; stir to combine.
- Cover and let flavors meld for a few minutes before serving.
