Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 ripe avocado
- 1/4 red onion, finely chopped
- 2 tablespoons chopped cilantro
- 1 jalapeño, seeded and minced (optional)
- 1 lime, juiced
- Salt to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon chopped parsley
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice
- Lime wedges, for serving
- Fresh cilantro, for garnish
Instructions
- In a bowl, combine shrimp, olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Toss everything until shrimp are well-coated in the marinade.
- Preheat your grill or grill pan over medium heat. Place the marinated shrimp on it. Grill each side for about 2-3 minutes until they turn pink and are cooked through.
- In a small bowl, mash the ripe avocado using a fork until smooth. Stir in finely chopped red onion, cilantro, minced jalapeño (if using), lime juice, and add salt to taste.
- In another small bowl, whisk together mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth and creamy.
- Divide cooked rice into serving bowls. Top each bowl with grilled shrimp, generous scoops of guacamole, and drizzle with creamy sauce. Garnish with lime wedges and fresh cilantro before serving.
