  • Juice of 2 limes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)

Instructions

  1. Pat the scallops dry thoroughly. In a bowl, combine them with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne pepper. Let marinate for at least 30 minutes.
  2. Heat a non-stick skillet over medium-high heat. Sear the scallops for about 2-3 minutes on each side until golden brown.
  3. In a separate bowl, whisk together mayonnaise, sour cream, cilantro, lime juice, chili powder, cumin, garlic powder, salt, black pepper, and optional cayenne until smooth.
