  • 3/4 cup dark brown sugar (163 grams)
  • 3/4 cup granulated sugar (156 grams)
  • 2 large eggs
  • 3 cups all-purpose flour (390 grams)
  • 1 tsp baking powder
  • 2 cups semi-sweet chocolate chips
  • 35 pieces soft caramels

Instructions

  1. Unwrap the caramels; set aside 15 whole for stuffing inside cookies and chop the rest.
  2. In a mixing bowl, melt the butter and whisk in both sugars until well combined. Add eggs and vanilla extract, mixing until smooth.
  3. Stir in dry ingredients until a dough forms, then fold in chocolate chips.
  4. Chill the dough in the refrigerator for 20 minutes.
  5. Scoop dough into balls, flatten slightly, place one whole caramel inside, and wrap dough around it. Top with chopped caramels and extra chocolate chips.
