  • 12 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 7 oz block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer.
  4. Place the feta cheese in the center of the baking sheet, surrounding it with the head of garlic and lemon quarters.
  5. Drizzle the remaining tablespoon of olive oil over all ingredients and roast for about 30 minutes or until golden brown.
  6. Once roasted, drizzle honey over the feta and sprinkle chopped basil on top before serving warm.
