  • 1 lb large fresh shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, add a splash of olive oil. Once hot, cook shrimp until pink and opaque (about 3 minutes per side). Remove from heat and let cool.
  2. While shrimp cools, chop avocados, cucumber, cherry tomatoes, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large bowl, mix chopped veggies with cooled shrimp and cilantro. Drizzle with dressing.
  5. Toss gently to combine without mashing the avocado. Serve immediately.
