  • 2 tbsp granulated sugar (for swirl)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with water

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of the pan. Bake for 8-10 minutes until golden.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well. Incorporate eggs one at a time.
  4. Cook blueberries with sugar and lemon juice over medium heat until softened; stir in cornstarch slurry and simmer until thickened.
  5. Pour cheesecake batter over the crust, add dollops of blueberry mixture, and swirl gently. Bake for 50-60 minutes or until set but slightly jiggly.
  6. Cool in the oven for an hour; refrigerate for at least four hours before serving.
