Ingredients
- 4 large eggs
- 4 large egg yolks
- 1 cup granulated sugar
- 22 oz raspberries (fresh or frozen)
- 2 lemons (juiced and zested)
- 1 cup unsalted butter
- 1 cup whipping cream (cold)
- 1 lb mascarpone cheese
- 2 cups raspberry curd (cooled or room temperature)
- 2 packs ladyfingers
Instructions
- In a mixing bowl, whisk together eggs, egg yolks, sugar, and salt until light and fluffy. Add raspberries and lemon juice; mix well.
- In another bowl, whip cold cream until soft peaks form. Fold in mascarpone cheese and raspberry curd until smooth. Add vanilla extract.
- Prepare the syrup by combining water, sugar, lemon zest, and raspberries in a saucepan over medium heat until sugar dissolves. Cool before use.
- Quickly dip ladyfingers in syrup and layer half in a baking dish. Spread half of the cream mixture over the ladyfingers. Repeat layering.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
