  • 4 large eggs
  • 4 large egg yolks
  • 1 cup granulated sugar
  • 22 oz raspberries (fresh or frozen)
  • 2 lemons (juiced and zested)
  • 1 cup unsalted butter
  • 1 cup whipping cream (cold)
  • 1 lb mascarpone cheese
  • 2 cups raspberry curd (cooled or room temperature)
  • 2 packs ladyfingers

Instructions

  1. In a mixing bowl, whisk together eggs, egg yolks, sugar, and salt until light and fluffy. Add raspberries and lemon juice; mix well.
  2. In another bowl, whip cold cream until soft peaks form. Fold in mascarpone cheese and raspberry curd until smooth. Add vanilla extract.
  3. Prepare the syrup by combining water, sugar, lemon zest, and raspberries in a saucepan over medium heat until sugar dissolves. Cool before use.
  4. Quickly dip ladyfingers in syrup and layer half in a baking dish. Spread half of the cream mixture over the ladyfingers. Repeat layering.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
