  • 1 cup fresh raspberries, finely chopped
  • 1 tablespoon fresh lemon juice (for glaze)
  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons ground cinnamon (for filling)
  • 1 cup powdered sugar (for glaze)
  • Zest of 1 lemon (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a mixing bowl, combine the flour, sugar, instant yeast, and salt.
  2. In another bowl, whisk together the lukewarm milk, melted butter, and eggs.
  3. Gradually add the wet ingredients to the dry mix until a dough forms.
  4. Knead on a floured surface for about 8–10 minutes until smooth.
  5. Place dough in a greased bowl; cover and let rise for about an hour until doubled.
  6. Prepare filling by mixing sugar and cinnamon; fold in raspberries.
  7. Roll out dough into a rectangle, spread filling evenly, then roll tightly into a log.
  8. Cut into 12 equal slices; place in a greased baking pan and let rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C) while waiting for the second rise.
  10. Bake rolls for about 25 minutes until golden brown.
  11. Prepare glaze by whisking powdered sugar with lemon juice until smooth; drizzle over warm rolls.
