  • 1 ½ cups rolled oats
  • 1 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 2 cups pumpkin puree
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter to form the crumble mixture.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish to create the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle remaining crumble mixture over the top and add optional chopped walnuts if desired.
  7. Bake for 30–35 minutes or until golden brown and set. Allow to cool completely before slicing.
