  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  2. In one bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix together the pumpkin puree, milk, melted butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed; pour into the greased dish.
  5. In a separate bowl, mix sugars and cinnamon for the topping; stir in chopped pecans and sprinkle over the batter.
  6. Carefully pour hot water over the topping without stirring.
  7. Bake for approximately 40 minutes until set; allow to cool slightly before serving.
