- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 teaspoons minced fresh ginger
- 3 cloves garlic (minced)
- 1 ½ tablespoons cornstarch
- 2 ½ tablespoons avocado oil or olive oil (divided)
- 1 ½ pounds boneless skinless chicken breasts or thighs (cut into 1-inch pieces)
- Salt and pepper to taste
- 1 small red onion (chopped into 1-inch pieces)
- 1 red bell pepper (chopped into 1-inch pieces)
- 4 cups broccoli florets (chopped into small bite-size pieces)
- 20 ounces canned pineapple chunks in 100% juice
Instructions
- Prepare the teriyaki sauce by whisking together soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a medium bowl.
- Heat oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper and cook until browned and cooked through (7-10 minutes). Remove from skillet.
- In the same skillet, add more oil and sauté chopped onion, bell pepper, and broccoli until crisp-tender (about 4 minutes).
- Return the chicken to the skillet along with pineapple chunks. Pour in the teriyaki sauce and stir until thickened (1-2 minutes).
