  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup fresh or canned pineapple chunks, drained (reserve juice)
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1/4 cup water or chicken broth

Instructions

  1. Prepare all ingredients: Cut the chicken, dice the bell pepper, chop green onions, mince garlic, and grate ginger.
  2. In a large skillet over medium-high heat, heat 1 tablespoon of oil. Add chicken pieces and cook until golden brown but not fully cooked through (about 5 minutes). Remove from pan and set aside.
  3. In the same pan, add more oil if needed. Sauté garlic, ginger, and bell peppers for about 2-3 minutes until fragrant.
  4. Stir in rinsed rice and toast lightly for a minute before adding pineapple chunks and some reserved juice.
  5. Return seared chicken to the pan and stir in soy sauce, brown sugar (or honey), and water or broth. Cover and reduce heat to medium; cook for about 15 minutes until rice is tender and chicken is cooked through.
  6. Fluff rice with a fork before serving. Top with chopped green onions and drizzle sesame oil if desired.
