- 1 cup fresh or canned pineapple chunks, drained (reserve juice)
- 1 bell pepper, diced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 cup white or jasmine rice, rinsed
- 2 tablespoons soy sauce (or gluten-free tamari)
- 1 tablespoon brown sugar or honey
- 2 tablespoons vegetable oil or sesame oil, divided
- 1/4 cup water or chicken broth
Instructions
- Prepare all ingredients: Cut the chicken, dice the bell pepper, chop green onions, mince garlic, and grate ginger.
- In a large skillet over medium-high heat, heat 1 tablespoon of oil. Add chicken pieces and cook until golden brown but not fully cooked through (about 5 minutes). Remove from pan and set aside.
- In the same pan, add more oil if needed. Sauté garlic, ginger, and bell peppers for about 2-3 minutes until fragrant.
- Stir in rinsed rice and toast lightly for a minute before adding pineapple chunks and some reserved juice.
- Return seared chicken to the pan and stir in soy sauce, brown sugar (or honey), and water or broth. Cover and reduce heat to medium; cook for about 15 minutes until rice is tender and chicken is cooked through.
