Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a saucepan, combine rinsed rice with 4 cups of water and a pinch of salt; bring to boil. Reduce heat, cover, and simmer for 15-20 minutes.
  3. In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken pieces; season with salt and pepper. Cook until browned (5-7 minutes).
  4. Stir in garlic and ginger; cook for another minute until fragrant.
  5. Add bell pepper and peas; sauté for about 4 minutes until tender.
  6. Gently fold in diced pineapple; cook for an additional 3 minutes.
  7. In a bowl, mix soy sauce, oyster sauce, and sesame oil; pour over chicken mixture.
  8. Stir well to coat and simmer for about 2 minutes.
  9. Combine cooked rice with the chicken mixture; gently fold everything together.
  10. Adjust seasoning as desired before serving with garnished green onions.
