Ingredients
- 4 cups chilled cooked brown or white rice
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 3 tablespoons coconut oil
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce (gluten-free if needed)
- 1 tablespoon honey
- 1.5 cups fresh pineapple, cubed
- 1/2 cup frozen peas
- 2 tablespoons fresh lime juice
- Salt to taste
Instructions
- Season chicken lightly with salt and let rest for 10–15 minutes.
- Heat 2 tablespoons coconut oil in a wok over medium heat; cook chicken for 5–7 minutes until browned. Remove and set aside.
- In the same pan, add remaining oil and sauté onion for 3–4 minutes. Add bell peppers, garlic, and ginger; cook for another 2–3 minutes.
- Deglaze with soy sauce and stir in rice, honey, pineapple, and cooked chicken. Toss well; reduce heat to low and cook for about 5 minutes.
- Finally, add peas and lime juice; stir gently until combined. Serve hot garnished with green onions and sesame seeds.
