  • 4 cups chilled cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 tablespoons coconut oil
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon honey
  • 1.5 cups fresh pineapple, cubed
  • 1/2 cup frozen peas
  • 2 tablespoons fresh lime juice
  • Salt to taste

Instructions

  1. Season chicken lightly with salt and let rest for 10–15 minutes.
  2. Heat 2 tablespoons coconut oil in a wok over medium heat; cook chicken for 5–7 minutes until browned. Remove and set aside.
  3. In the same pan, add remaining oil and sauté onion for 3–4 minutes. Add bell peppers, garlic, and ginger; cook for another 2–3 minutes.
  4. Deglaze with soy sauce and stir in rice, honey, pineapple, and cooked chicken. Toss well; reduce heat to low and cook for about 5 minutes.
  5. Finally, add peas and lime juice; stir gently until combined. Serve hot garnished with green onions and sesame seeds.
