  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown; remove from heat.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Stir in pineapple chunks and cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
  5. Lower heat to simmer, cover skillet, and cook for 18–20 minutes until rice is tender.
  6. Return cooked chicken to the skillet; mix well and heat through.
