  • 1 bell pepper, diced

  • 1 onion, diced
  • 2 garlic cloves, minced
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook the rinsed rice in a medium pot with 4 cups of water over high heat until boiling. Reduce heat to low and simmer for 15-20 minutes until fluffy.
  3. In a large skillet or wok, heat olive oil over medium-high heat. Sauté diced onion and minced garlic until translucent (about 2-3 minutes).
  4. Add cubed chicken to the skillet and cook for about 5-7 minutes until golden brown.
  5. Stir in diced bell pepper and snap peas; cook for an additional 3-4 minutes until veggies are tender-crisp.
  6. In a small bowl, whisk together soy sauce, chicken broth, honey (if using), and ginger.
  7. Pour the sauce over the chicken mixture and add pineapple chunks; stir to coat evenly. Cook for another 2-3 minutes to thicken the sauce.
  8. Season with salt and pepper to taste. Fluff cooked rice in serving bowls and top with the pineapple chicken mixture.
