- 1.5 cups cooked rice
- 1 cup pineapple chunks
- 1/2 red bell pepper (diced)

Instructions
- Sauté diced chicken in olive or sesame oil over medium heat until fully cooked (about 5-7 minutes). Remove from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds, then add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; stir well.
- Mix cornstarch with water, then stir into the sauce until it thickens slightly (2-3 minutes).
- Return the chicken to the skillet along with pineapple chunks and diced bell pepper; mix until coated in sauce.
- Gently fold in cooked rice and heat through for another minute or two.
