  • 1 lb chicken breast (diced)
  • 2 tbsp olive or sesame oil
  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice or apple cider vinegar
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • Green onions (chopped) for garnish

Instructions

  1. Sauté diced chicken in olive or sesame oil over medium heat until fully cooked (about 5-7 minutes). Remove from skillet.
  2. In the same skillet, sauté minced garlic for about 30 seconds, then add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; stir well.
  3. Mix cornstarch with water, then stir into the sauce until it thickens slightly (2-3 minutes).
  4. Return the chicken to the skillet along with pineapple chunks and diced bell pepper; mix until coated in sauce.
  5. Gently fold in cooked rice and heat through for another minute or two.
  6. Garnish with chopped green onions before serving warm.
