Ingredients

Scale
  • 4 pieces chicken (legs or thighs)
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon black pepper
  • 1 tablespoon salt (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 1 cup chicken broth
  • 1 cup dried apricots or prunes (or a mix)
  • ½ cup toasted almond slivers
  • Fresh parsley or cilantro for garnish

Instructions

  1. Rinse the chicken pieces under cold water and pat them dry with paper towels.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they become golden brown, about 8-10 minutes.
  3. Stir in the minced garlic along with turmeric, cumin, cinnamon, black pepper, and salt. Cook for another 2-3 minutes until fragrant.
  4. Increase heat to medium-high. Add chicken pieces to the skillet and sear each side until golden brown, about 5 minutes per side.
  5. Once browned, stir in lemon juice while scraping any flavorful bits stuck at the bottom of the pan.
  6. Pour in chicken broth and add dried apricots or prunes. Bring the mixture to a simmer.
  7. Reduce heat to low. Cover the skillet and allow cooking for about 40 minutes to meld flavors beautifully.
  8. After cooking time is up, uncover skillet. Stir in toasted almond slivers; cook for an additional 5-10 minutes until sauce thickens slightly.
  9. Turn off heat; let chicken rest for about 10 minutes before serving for enhanced flavors.
  10. Transfer Persian Chicken to a serving dish and sprinkle with fresh parsley or cilantro before serving with rice or bread.
